Green Curry Veggies + Noodles

Ingredients:

2 cups (ish) veggies of choice (I like a combination of zucchini, carrots, onions, garlic, and green beans)

Chicken or vegetable broth (about 4 to 8 ounces)

1 can full-fat or reduced fat coconut milk

2 bricks Ramen noodles

Green curry paste to taste (start with a Tbsp and go from there)

Directions:

In a large, heavy skillet or pot, sauté the vegetables in a combination of olive oil and butter. Add the green curry paste, broth and coconut milk. Nestle the two Ramen bricks into the pan and cook until noodles are desired degree of doneness. Add more liquid if necessary.
