Nancy’s Beans

Ingredients:

4 slices of bacon

1 medium onion, chopped

1 can kidney beans, drained

1 can lima beans, drained

1 can baked beans in tomato sauce, undrained

4 oz. sharp Cheddar cheese, cubed

1/2 cup brown sugar

2 tsp. Worcestershire sauce

1/3 cup ketchup

Parmesan cheese to taste

Method:

Chop bacon and brown with onion. Remove from heat and add beans, Cheddar cheese, sugar, ketchup, and Worcestershire. Put in a greased, shallow baking pan and sprinkle with Parmesan.

Bake at 350 for 30 minutes.

Notes:

I don’t know who Nancy is, but she makes amazing beans. My dear friend, Sam Baroody, shared this recipe with me, and it is one of my most requested dishes. It’s easy to make vegetarian by omitting the bacon and beginning with sauteeing the onion. Make sure the baked beans are vegetarian if you go this route!
